What does your day look like as a Sous Chef?
As Sous Chef, you are the right hand of the Executive Chef and play a key role in the success of Restaurant JAQ and the hotel’s culinary operations. You lead by example and ensure that your team delivers an exceptional guest experience, both in à la carte service and in Meetings & Events.
You are responsible for the daily operations of the kitchen, guiding and motivating the team, overseeing food quality and presentation, and maintaining the highest standards of hygiene and safety. You collaborate closely with the Executive Chef to manage planning, menu development, and cost control.
Your main responsibilities include:
Supervising and coordinating daily kitchen operations across Restaurant JAQ and supporting outlets.
Leading, coaching, and developing the kitchen team to deliver consistent quality.
Ensuring excellent communication and cooperation between the kitchen, service, and other departments.
Monitoring food quality, portion control, and presentation in line with Hilton standards.
Managing purchasing, inventory, and cost control to ensure profitability.
Supporting the Executive Chef in menu development, innovation, and seasonal updates.
Ensuring compliance with HACCP and all health & safety regulations.
Taking responsibility for training, development, and performance management of the culinary team.
Contributing to a positive and inclusive team culture that reflects Hilton’s values.
Acting as kitchen lead in the absence of the Executive Chef.
Who are you?
You are a natural leader with strong culinary expertise and organizational skills. You bring creativity, efficiency, and passion to every service, while motivating others to perform at their best.
You bring:
Proven experience as Sous Chef, or a strong background as Senior Chef de Partie / Junior Sous Chef in an à la carte or hotel environment.
Excellent knowledge of kitchen operations, cost control, and stock management.
Strong leadership and people management skills, you lead by example.
Passion for quality, presentation, and guest satisfaction.
Ability to work under pressure while maintaining a calm and positive attitude.
Strong understanding of HACCP and food safety standards.
Fluency in English (Dutch is a plus).
Flexibility to work mainly in the evenings, weekends, and holidays.
Residency in or near Rotterdam.
The legal right to work in the Netherlands.

A fulltime contract (38 hours per week)
Salary in salary scale VII of the Horeca collective labor agreement.
25 paid holiday days per full year (on the basis of 38 hours per week)
