Junior Sous Chef - ARCA ARCA is a destination restaurant and bar concept developed by two Michelin starred Portuguese chef, Henrique sa Pessoa. ARCA means "chest" in Portuguese. The story behind this is an idea of a historic voyage. Henrique has created a unique menu focusing on the trading routes of Portugal, incorporating traditional dishes with a modern twist using Asian flavours and spices. • Will look after the day-to-day management of the kitchen during the shift - through tasks like holding briefings, allocating resources and ordering produce
• Will lead by example in preparing, producing and presenting food and further motivate, skill up and develop the kitchen team to keep raising standards and expectations
• Will use culinary skills and attention to detail to maintain high standards in quality, freshness, service, hygiene and Health & Safety
• Will be a positive role model whose passion for great food enthuses the whole team to be better
• Is proactive in contributing to menu development and shares fresh ideas for ingredients, dishes and concepts
• Will also think with a business head, looking for ways to improve process and efficiency
