Your responsibilities as a Skilled Butcher
Perform high-quality steak cutting to exact specifications
Carry out boning and general butchery across multiple proteins
Process beef, pork (including belly and legs), lamb (legs), and some poultry
Work efficiently to fulfil daily order volumes (typically 180–260 orders)
Follow written specifications and production instructions accurately
Maintain high standards of hygiene, safety, and product quality
Work closely with the wider production team and Head Butcher
What we’re looking for in a Skilled Butcher:
Essential skills and experience
Strong steak cutting ability (this is critical)
Proven butchery and boning experience
Experience working with beef, pork, and lamb
Ability to work at speed without compromising quality
Confidence completing a practical block test
Desirable experience
Experience working across multiple protein types
Background with transferable knife skills (e.g. chef experience)
Experience in high-volume or production-led environments
Junior candidates will be considered if you:
Have basic knife skills
Are willing to learn and develop
Show resilience and a strong work ethic
