What you’ll be doing as Butchery Operations Manager
You will oversee the full butchery operation from carcass breakdown through to finished product, ensuring high standards of quality, efficiency, and compliance across multiple channels including retail, hospitality, and wholesale.
Lead day-to-day operations across breaking, packing, fulfilment, and value-added production
Drive yield optimisation and whole-carcass utilisation
Manage production planning, workflow, labour, and equipment readiness
Ensure compliance with HACCP, food safety standards, and FSA requirements
Maintain traceability, CCPs, and production documentation using food safety systems
Oversee recipe management, costing, and product consistency
Support development of charcuterie and value-added products (cured, smoked, etc.)
Lead, train, and develop the team to ensure consistent performance and standards
Collaborate with retail, hospitality, and wholesale teams to meet demand
What we’re looking for in a Butchery Operations Manager
Essential
Strong background in whole-carcass butchery (beef, lamb, pork)
Experience in an FSA-approved or compliance-led environment
Proven ability to lead and manage teams within a production setting
Strong understanding of yield, product quality, and operational efficiency
Knowledge of HACCP, CCPs, and food safety systems
Experience with packing, labelling, and traceability processes
Exposure to value-added production (charcuterie, curing, smoking, etc.)
Desirable
Experience working with high-quality or native-breed livestock
Involvement in FSA approval or audit readiness processes
Background in multi-channel operations (retail, hospitality, wholesale)
