Assistant Head Butcher

This is an excellent opportunity for an experienced Assistant Head Butcher to join a respected estate-based food operation supplying both wholesale and internal retail channels. This is a hands-on role within a professional environment where quality, consistency, and high standards are central to the operation.

Your responsibilities as Assistant Head Butcher

Support daily production and operational activity across the butchery department
Carry out full carcass breakdown and meat preparation across beef, lamb, and pork
Assist with production planning and workload coordination
Maintain high standards of product quality, presentation, and consistency
Ensure food hygiene and safety standards are maintained at all times
Step into operational leadership duties when required in the absence of senior management
What we’re looking for in an Assistant Head Butcher

Previous butchery experience within production, wholesale, or mixed retail environments
Strong technical ability in carcass breakdown and meat preparation
Ability to work independently and take operational responsibility when required
Good understanding of food safety and hygiene procedures
Experience supporting production planning and daily workflow management
Working hours: 6:00am – 3:00pm, 5 days out of 7
